Once all the ingredients are collected and prepared, this recipe is quick and easy! And I should mention, very delicious 🙂
Ingredients:
8oz. (200g or 2 cups) flour
2 teaspoons of baking powder
5oz. (125g or ⅔ cup) sugar
2oz. (50g. or ½ cup) chopped walnuts
4 carrots, prepared and grated
2 bananas, mashed
2 eggs, beaten
5fl.oz (150ml or ½ cup) sunflower oil
1-2 teaspoons mixed spice (cinnamon, nutmeg, allspice)
Handful of raisins
For the topping:
Cream cheese
Icing sugar (powdered sugar)
Method:
1. Preheat oven to Gas mark 4 (350F, 180C)
2. Beat all ingredients together well and pour into a lightly greased cake pan
3. Bake for about an hour on the centre rack of the oven
4. Remove from oven and cool thoroughly on a wire rack
5. Blend cream cheese and icing sugar together to make a topping and spread evenly over cooled cake
